Before Amanda Cobb accepted her position as General Manager for Sodexo Dining Services on campus, she worked in slightly more tropical climates. Her work with Sodexo has brought her all over the world. She’s set up Sodexo’s military division in Guam, ran the food program at a private school in Hawaii, and eventually landed in Colorado, where she has been for the last 8 years.

Since she joined the CMC Leadville team on January 5th, many changes have already been implemented. “We have started the batch cooking process, so food is fresh.  Also, we have made great strides in cleanliness and sanitation.  We have made a few décor changes and most importantly, we have fixed the espresso machine.”

Amanda sat on the advisory council for School Nutrition with the Colorado Department of Education. She implemented the fresh fruit and vegetable program for the Rocky Ford and East Otero School Districts. “We offered breakfast in the classroom, lunch and after school snack programs.  I also received a grant to run a back pack program. We sent 115 boxes a week home with needy families so they had food on the weekends when we did not have school.”

But Amanda has a secret. She hates vegetables, and won’t eat lettuce or anything raw. “I love Italian foods. I like to make sauces and chili’s, and I am good at Asian infused foods.”

Her day mostly consists of day to day operation of the food service.  “I do everything from hiring and firing to placing food orders, making budgets, schedules, creating menu cycles, purchasing and payroll.”
